I don't know about you, but I love leftovers. Especially when it leaves you with makings for a good sandwich. I made a roast chicken on the weekend with some roasted onions. A little of that, horseradish mayo, Dijon mustard, lettuce and a pickle. Now that's a good sandwich. A perfect quick meal between Christmas shopping and holiday parties!
